Indie Spotlight — Wafels and Dinges, aka Waffles on a Truck

Update June 2010: in June 2009 I switched to eating gluten-free, egg-free, dairy-free refined-sugar-free and nearly vegan, so this review predates the switch (by almost a year). If you can eat gluten and dairy, however, these waffles are amazingly delicious.


The latest dessert craze in New York is fancy yummy desserts out of a truck. Yes, you read that correctly. And I think that concept is going to spread quickly to other cities. It’s a great concept for an indie food company — they have all the benefits of multiple shops at different locations from the beginning, yet no crushing rent costs.

What’s funny is that I felt like I kept hearing about this trend within the span of the same week. First, this article from Food and Wine (which mentions other cities as well), and this article from the New York Times, and then my husband came home saying he had read good things about the dessert trucks on several blogs.


So, a few days later we tried the Wafels and Dinges truck. As you can see in the picture above, it’s a cute little yellow truck. Think a fancy ice cream truck with waffle irons inside.

And then I got addicted. To the Liege Waffle — it’s the opposite of the usual crunchy light Belgian (or Brussels) Waffle — which the truck also carries. In contrast, the Liege is a doughy rich waffle with a caramelized sugar crust. Unlike NYC Food Guy, I prefer the Vanilla over the Cinnamon. Interestingly, while the vanilla/plain Liege is very authentic to Belgium, the Cinnamon one was developed specifically for the American market.

Dinges are the various toppings. I tend to like my Liege waffles plain, as the caramelized sugary yumminess comes out better, but I do like Nutella and/or whipped cream when I get a Brussels waffle.

Which is not often, since I am so addicted to the Liege.

Handily enough, Wafels and Dinges is on twitter, so it’s easy enough to know where the truck is in New York.

This post isn’t just about a random waffle truck in New York – though if you are visiting, be sure to try the Liege. In all seriousness, I really think the dessert truck concept will take off in other cities. The start-up costs are comparatively low, and allow great locations. For example, the Waffel truck is often right outside Manhattan’s only Trader Joe’s, near busy Union Square. Picture montage from Wafels and Dinges website.

Sounds yummy! I think I would prefer the Liege too!

OOoh I don’t usually like waffles b/c they’re crunch so I bet I’d love the Liege ones. :)

It makes sense to me! With the economy diving, small business owners need to make changes that decrease overhead while giving them the greatest amount of flexibility to expand and reach a large volume of people. It is smart business. Not to mention, that I love waffles. I am voting for this movement to take over the entire country. : )

Jenndz — the Liege is so chewy yet a tiny bit crispy from the caramelized sugar. Very delicious!

Sparkly Bunny — Like you, I am just kind of meh about the regular Belgian (aka Brussels) waffles, but the Liege is so different and yummy.

the Curator — you definitely should try them next time you are in town. They are near Union Square almost every day.

Pink Heels — you are so right about this being a great way to cut overhead. And I do home they come to your neck of the woods soon. Wouldn’t it be awesome if fleets of waffel trucks were out there, selling yummy Liege waffles?
