Tomatillo-Avocado Salsa

Remember the Mango Habanero Salsa Un-Recipe from a couple of weeks ago? The same episode of Throwdown with Bobby Flay {the green chile burger one} that inspired the Mango Habanero Salsa inspired husband and I to make a version of this avocado tomatillo relish. There are several recipes of this all over the web, but we went with the basic instructions from the episode. Husband ate the salsa as part of a chicken taco, while I used it to top a black bean spinach taco.

Tomatillo-Avocado Salsa
Inspired by Throwdown

1 ripe Haas avocado, peeled, pitted and diced
3 tomatillos, husked, washed and diced
juice of 1-2 limes
2 green onions, white and green parts, thinly sliced
1/4 cup (small handful) of fresh cilantro, chopped
Sea salt and freshly ground black pepper

Combine avocados, tomatillos, lime juice, in a medium bowl. Mix in the green onions and cilantro. Add salt and pepper, to taste (we skipped that and added more lime juice instead).

Mmmm! Sounds so good! I will have to try this receipe. I hate "cooking" but this is work mixing.
