Lunch Sept 1

is hosting several gluten-free bloggers this month over on her blog as part of a Gluten-Free Falls Specials Guest Series (updated: here is a post by Iris on this series). I am excited to be participating, and my plan had been to contribute a post on packing my lunch. I pack my lunch and two snacks pretty much every single day, sometimes even on weekends when I am going to be out and about.  People are always asking me how I keep packing my lunch, day in and day out.  You would think I would have a lot to say. Yet somehow, I am sorely lacking inspiration on the subject.

So, as an experiment, I am planning to photograph my packed lunch for a few days.  Initially I was just going to take the pictures and use them to kickstart a post idea for The Daily Dietribe, but then it occurred to me I should post them here as well.

And what better day to start this endeavor than today, September 1. At the beginning of this post is a picture of today’s lunch and snacks. It is a good example of how I pack two snacks and a lunch, but you cannot really tell them apart. The main lunch was kale salad and the black beans and quinoa topped with mango salsa. I ate the peperonata (a variation of this recipe, with less oil) with the hummus as a 5pm snack to tide me over since I was going to yoga at 8pm, while the figs were mainly dessert after lunch, though a couple served as my mid-morning snack.And the carrots were for crunch at both lunch and 5pm:

This particular set of lunch and snacks is reminding me that I am very lucky to have a husband who cooks and does food prep as well.  On Sunday we made the peperonata together, with him doing most of the chopping for that while I made lentils for our lunches early in the week.  Last night he made the mango salsa and chopped the carrots while I hung out with the heating pad in hopes of de-tweaking my back.  And this morning he cut the figs while I packed our lunches.  So yes I am very lucky. And on that note, I am off to sleep.  It’s been another long day, though I was able to get through an entire yoga class, which was sorely needed.
