{Monday Lunchbox}

Happy Monday! Today’s lunch:

  •  A no-recipe-just-mix-salad of chopped vegetables with quinoa and chickpeas and add a pinch of salt, a drizzle of olive oil and some lemon juice with a side of Mary’s Gone Crackers Sticks and Twigs:

For the quinoa salad, the ratio ended up being equal parts of chopped zucchini, bell pepper, quinoa and chickpeas, with a couple of tablespoons of chopped parsley and scallions.  It was a great way to finish up vegetables from the previous week to make room for new market buys yesterday. 

A combination of fighting a cold and having to get up extra early this morning meant that I did not pack snacks.  I had also planned hoped to be home earlier than I was, but I have to say that the quinoa salad was very filling, and I had extra quinoa salad and  Mary’s Gone Crackers Sticks and Twigs.  So I ended up being fine as I snacked on the extras.

I am debating continuing the series indefinitely, but would welcome ideas for ways to make it less monotonous.

Personally I love this lunch box series. And I also love quinoa salad – I always feel so virtuos eating it.

Feel better soon! I love this kind of lunch. I do this pretty often – throw together random veggies in some sort of lunch salad thing. Your version looks great!
