{Today’s Lunchbox} Shopping Sustenance

Thank you for all the nice comments and emails to my less-food-more-life post and I am also so glad you enjoyed the lunchbox yesterday.  I am actually currently on vacation so the rest of the week will be a combination of weekend lunchboxes that I have saved from the last few weeks and travel lunchboxes from this trip.
Saturday Shopping Lunchbox
Today’s lunchbox is actually the lunch I packed the Saturday I went shopping for clothes recently. Here are the contents of lunch (no snacks):
That day was actually my first full day off in several weeks and husband and I were going to go shopping in Friendship Heights, a neighborhood in on the Washington, DC – Maryland border that has a ton of stores and a newly opened Whole Foods.  I have had good luck eating at that Whole Foods.  The store has a whole side of the salad bad that seems to be fairly common-allergen-free by design in that there are no dishes with wheat or dairy to cross contaminate the plain vegetables and grains and beans.  It was a beautiful day so the plan was initially to grab lunch there and eat outside.  But then I took a look in the fridge that morning and realized that we had more leftover beans ‘n kale salad than expected and that the tofu dish would not freeze well so I ended up packing a lunchbox for myself.  My husband picked up brisket and other barbeque goodies from Whole Foods and had some of the kale salad.

Also, because it was my first day off in a while and I knew I would be near a Whole Foods, I was a bit (err, a lot) lackadaisical about planning for food that day. I was out of hummus and just about anything snack-like. I figured I would pack the kale salad as a snack and we would have a late lunch, but we ended up having an earlier lunch and I went on a mission to shop for a while, so by late afternoon I was in dire need of a snack.  Fortunately, we just went back to Whole Foods and I picked up some guacamole and Mary’s Gone Crackers to tide me over.

I tried a few of the different Lundberg brown rice couscous flavors and I thought all of them were "meh" as well – even cooked as directed.

I love that you have kale so often. I love it. These sound great.
