{Today’s Lunchbox} Chia Experiment

I swear there are greens in here lunchbox

Today’s lunchbox consists of a lunch and two snacks:

  • Roasted sweet potato and leftover kale stir-fry from Vegetarian Times
  • Raspberry collards smoothie
  • Raspberry-ish chia pudding

I was feeling daring so made a smoothie with unsweetened almond milk, raspberries, collards and vanilla protein powder.  I was not that daring, as I only used a handful of collards rather than my usual several handfuls of greens.  Since I was just trying a new flavor profile (I have done raspberry with kale and/or spinach before, but never collards), I did not measure the smoothie or plan to make two 16oz smoothies.  Instead I just ended up with a 16oz smoothie and some leftovers.  Assessing my lunch, I realized it was lower on proteins and fat than I would like, so I decided to pour the leftover smoothie over a 1/4 cup of chia seeds and see how this pudding variation works.  Fortunately, a quick taste test after taking the picture indicated that while a little different, it was not a bad idea.  I am definitely going to repeat the experiment again.

raspberry collards? My brain can't wrap around that one, I may just have to try it!

my sister just made some handmade sushi with nori wraps and rice, but we sprinkled chia seeds on the rice and it was so good! I love to put them in a mashed advacado with lime juice
