{Today’s Lunchbox} Faye’s Lunchbox V: Is it Friday Yet?

Today’s lunchbox is another one by Faye.  That tomato soup looks great.

Today’s lunchbox includes the following:

  • 4 cups of Winter Green Smoothie
  • 2 pickles (not in vinegar but cultured in water with salt)
  • celery, grape tomatoes, cucumber and red pepper with hummus
  • an orange
  • Tomato Basil soup

    Nothing fancy about today’s lunch. I was sick over the weekend (thankfully now a rare occurrence) and I have been feeling run down this week. I haven’t been able to make anything wild and exciting in my dehydrator, which  I love doing, so it’s been a disappointing week lunch-wise.

    The Tomato Basil soup is from Raw on $10 a Day (or Less!). It was simple and I made it in 3 minutes last night in my Blendtec. I split it up into 4 bowls for lunches and dinner.

    Fun news – I spoke at the law faculty today and one former colleague, whom I now only see annually, came up to me and asked me why I don’t age. A lovely comment and I credit my new lifestyle. And a few people said my talk was pretty good too – it’s nice to be encouraged on those days you feel most drained. Enjoy your lunchboxes!
