{Today’s Lunchbox} Chard Rolls

Today’s lunchbox and two snacks:

I bought some beautiful Swiss Chard on Monday and it totally inspired me to repurpose my leftovers from Appetite for Reduction into something a little fancy and different.  Now I am thinking about dolmas made with Swiss Chard.  The rolls were super easy to make.  I stemmed one big chard leaf (and threw the stem into my smoothie), cut the leaf into four large pieces and just rolled up half a wedge of the Buffalo Tempeh and some Cashew Mayo into each leaf piece.  Even though the contents of my lunchbox were similar to yesterday’s, repurposing them into rolls made it all a bit more fun.

What tricks do you use to repurpose leftovers?

What a great looking lunch! Your breakfast bars look perfect! 😀

One question (that may seem a bit dense): do those individual containers inside the lunchbox have their own covers? Or how does everything stay separate and sealed?

Love your idea using the swiss chard. I add left-over veggies to salads for lunch the next day. Sometimes I make a burrito using GF tortilla's. Your idea is much healthier.

I rarely make enough to have leftovers since I hate them:) but sometimes I throw certain types of leftovers (risotto, stir fry, rice dishes) into a wrap to make it different. Your breakfast bars look so good!

Ricki – some of the containers have lids, while the open containers don't seem to move because of the tight-fitting lid of the lunchbox itself.

Johanna B – I love GF tortillas too, but try to keep my grains to a minimum. Also, I find that GF tortillas do not pack so well.

Meri – I need to come up with more lunchbox ideas for people who do not like leftovers. I am all about leftovers.

Heather – yes, I have become a huge fan of chard and collard wraps :)
