{Today’s Lunchbox} Faye’s Lunchbox VII: Stress Eater

Again, I over-pack. Work is very stressful right now and I’m a stress-eater, so I’ve been eating everything I bring. At least I’m not downing Ben & Jerry’s or Oreos. If a girl is going to overeat, it might as well be on raw vegan sushi and cranberry scones, no?
 
Today’s Lunch:

The best part of this lunch is, hands-down, Frederick’s raw vegan sushi. I was a lover of sushi for years prior to becoming a high raw vegan. I have tried all types of raw vegan sushi recipes and I hated them all. I don’t do well on rice, so I truly sought another alternative. But the faux-rice made from cauliflower was terrible.
 
But Frederick replaces the need for a rice or faux-rice with a pate base of almonds, carrot, lemon, dulse – it’s phenomenal. I’d share the recipe, but it’s in one of his e-books. I urge you to go find it! It’s well worth it.

Thank you Faye. This looks fantastic.  I need to track down this Frederick Patenaude book with the raw sushi recipe. Like Faye, I do not like the raw cauliflower option of raw sushi.

That sushi looks amazing! Wow. And I'm not sure it counts as "stress eating" if it's not Oreos or other junk?? :)
