Thank you for all the great comments on Heather’s lunchbox yesterday. Wasn’t the lunchbox fabulous? Be sure to check out Heather’s blog Gluten-Free Cat.  Whether you eat a gluten-free diet or not, Gluten-Free Cat has lots of delicious foods.

When things get really busy in our household, one of the first things my husband and I forsake is cooking from recipes. Maybe it is because we are both lawyers and we just get sick of following directions in busy time (ok, fine, maybe that statement is just about me), but if things are busy, we turn into those people who assemble meals based on what is in the fridge and what pairs up. Nothing complicated.  A lot of salads and quick sautees. This lunchbox contains a couple of examples of the later:

I'm super similar – if I get really busy, recipes are the first to go – I head for lots of scrambled eggs, cereal and power bars!

Yum! That white bean dish sounds delicious. Kudos to you for coming up with something so tasty without a recipe.

You already have your april in the raw recipe ready? I'm starting to panic!

I love your laptop lunchbox. I want a free one too. It sure would help at the airport because they dislike my metal containers.

I am making the sunbutter chia pudding tomorrow or Friday.

You know what I love about your lunchboxes: proof you can be healthy and well-fed with minimal effort.

I've seen that April in the Raw button a few places. I'm curious to see what people come up with!
