{Today’s Lunchbox} Tofu Favorite

I know I usually have super-colorful lunches, but today’s lunchbox is a pretty much beige and green.  Lots of kale though, so I figure I am covered nutrition-wise. Today’s lunch and 2-3 snacks:

• Steamed kale with Twin Oaks Sunergia Spinach Jalapeno Tofu.  This might be my favorite of all the flavors I have tried. 
• Un-recipe White Beans (I like a small serving of beans as a snack with a couple of kale chips – very satisfying!)
• Reinvented Mac and Peas

• Gena’s protein-packed kale chips recipe aka the magical kale chips
• Green Smoothie with Banana, Hemp and Kale

I was asked where Twin Oaks Sunergia tofu can be found in the Washington DC area – I have seen different flavors of Twin Oaks tofu at different Whole Foods so it seems to really depend on the individual store.  For example, the P Street Whole Foods had Sunergia Pesto and Spicy Thai flavors recently, but I have also purchased the Twin Oaks brand tofu there in plain, while I have found the Twin Oaks brand Italian Herbs tofu at the Tenleytown Whole Foods, but no Sunergia.
