{Today’s Lunchbox} Simple

I am on vacation, but {Today’s Lunchbox} is not.  I will post my travel lunchboxes Thursday and Friday next week, but in the meantime, I have a stockpile of lunchboxes I had not yet shared, as well as some FAQs to answer, so expect a lunchbox-related post every day while I am away.

Today’s lunchbox is from this past Monday – it includes just a snack and lunch:

  • Roasted sweet potatoes
  • Quinoa with green beans and walnuts
  • Steamed edamame
  • Green Smoothie with Banana, Hemp and Kale
  • Carrots with a side of Nutzo Peanut-Free. I usually prefer raw nut butters, but was tempted with all the yummy ingredients in this nut butter:  almonds, cashews, chia seeds, flaxseeds and pumpkinseeds among others. Now I am not so sure –  I am worried I should have refrigerated it even unopened, because of the flaxseed oil is a little too distinctive for me.  No matter, it was still a good lunch!

Thought of you this morning–the Wall St Journal has an article about various lunchboxes and features a bento-like box like yours!

Another beautiful, tasty lunch, Valerie! I love your way of speaking … "a little too distinctive" sounds so refined. 😉 Wow on all the Nutzo ingredients though!
