{Today’s Lunchbox} Preview

I am on vacation, but {Today’s Lunchbox} is not.  I will post my travel lunchboxes Thursday and Friday next week, but in the meantime, I have a stockpile of lunchboxes I had not yet shared, as well as some FAQs to answer, so expect a lunchbox-related post every day while I am away. 

Today’s lunchbox was my lunchbox when I went to work last Sunday:

  • Spinach, topped with azuki bean salad (similar to this salad, minus the quinoa), roasted sweet potatoes and sliced red peppers. I skipped the dressing because the azukis and sweet potatoes provided plenty of texture.
  • Focaccia from Delectably Free (see my Adoption post of Beth’s blog)
  • Almond Mocha Chia Pudding

Really though, it is a preview for tomorrow’s post on Almond Mocha Chia Pudding, which will be my contribution to the April in the Raw event, created and hosted by Brittany of Real Sustenance.

I've just recently discovered the deliciousness that is chia pudding – can't wait to try this variation!

I have been wanting to try chia seeds for a while. I'm never of what the texture will be like though.

@Faith – I was really pleased with this recipe. I am a huge fan of chia puddings generally, but tomorrow's variation is definitely a favorite :)

@Donca – chia puddings remind me of tapioca pudding, though I should add that while I love chia seeds, my husband really dislikes them.

I haven't gotten into chia pudding in a while, but I've got a 5 pound bag of chia seeds, so it will probably be on the menu!

Like Alisa, I a STOCKED to the brim with chia … so this one will be tried for sure! Even have some nibs on hand and my little guy is on the ACD right now so this is the perfect recipe. Thank you!!
