Summer always makes me crave lemon, parsley and scallion flavors – today’s lunchbox of lunch and two snacks showcases these flavors perfectly:
- Kale salad, massaged with lemon and olive oil, and topped with sea salt and chopped scallions
- Roasted eggplant, pureed with lemon juice, lime juice, scallions, cilantro, parsley, and salt
- Hummus, though a very worthy substitute would be this Rustic White Bean Dip
- A grain-free vegan savory broccoli muffin
- Chia juice pulp crackers
- Green juice, made with broccoli, parsley, zucchini and carrot

I think you are seriously the healthiest person I know!! I really do want to try a savory muffin like that!! and massaged kale salads… this IS the time isn't it! Love those!
