Happy Wednesday! Today’s lunch and two snacks:
- Quinoa Protein Bowl from Choosing Raw (with white beans (cooked in the rice cooker) as I am out of frozen edamame)
- Sliced romaine, peppers and cucumbers, with Twin Oaks Tofu marinated in pesto of sorts – basil, lemon juice and sea salt.
- Pumpkin Chia Pudding
Specific Disclosure: I received Twin Oaks Tofu from the company a few months ago.
