So somehow, I sort of went on lunchbox hiatus – right after finishing up the Brown-Bag Challenge too (see here for my lessons learned). I usually catch up on posting my lunchboxes for the week over the weekend, but the weather was so glorious I instead somehow walked 10 miles in two days and spent no time anywhere near a computer. I plan to add more lunchbox posts this week and next but in the meantime, let’s start with this lunchbox from last week:
- Comforting Tofu Tahini Scramble atop kale, which I did not massage with olive oil and lemon juice as I ran out of time – it was ok, but kale is better if it has been massaged a bit
- Celery with Cheezy Red Pepper Hemp Dip
- The very last of my Amande yogurt from my trip (I found one in back of the fridge) with cacao nibs
