January 4 Lunchbox
Happy Tuesday! Today’s lunchbox contains lunch and 2 smoothie snacks:

  • Pineapple cashew quinoa stir-fry loosely based on this recipe from Veganomicon.  I actually adore the recipe exactly as is, but the night my husband made this stir-fry, we did not have all the ingredients, so there was some improvisation (i.e. peas instead of edamame, zucchini instead of bell pepper) but the key ingredients of quinoa, herbs, cashews and pineapple are there.  While the recipe from Veganomicon is not gluten-free, it can be easily made gluten-free by substituting tamari for the soy sauce. 
  • Two Super Quick Green Smoothies

I thought of you on Christmas when I made that kabocha squash recipe (with butternut squash because I couldn't find kabocha). It was wonderful. I had it with potatoes cooked with red peppers and Swiss chard cooked with garlic. I dare anyone to have a more colorful Christmas feast.

Thanks for introducing me to the wonders of squash and I hope you had a wonderful holiday and are enjoying a fabulous new year. :)

I don't think I've commented here before but I sure do love to follow your bring-along lunch posts. I just wanted to let you know that you inspired me to bring a green (mostly green :)) smoothie in a jar to work with me today. I put spinach, almond milk, chia and frozen blueberries in it and it is So good! I feel like I'm starting the day off just right! I also packed my bento box full of walnuts, string cheese, apple and a ryecrisp. Yay! Thanks for being a great inspiration! Love your blog!
