Today’s lunchbox almost did not happen. Yesterday, I had a super long day at work, and then went to the gym, and, despite having plenty of vegetables in the fridge, somehow was coming up short with a plan for dinner, much less today’s lunch. Then I got home to this:
You know my love for Twin Oaks Tofu (see this lunchbox, and this one, and you can see a package of it in the background here). A few days ago Benji from Twin Oaks Tofu sent me an email offering to send me some Twin Oaks and Sunergia tofu flavors. Obviously, the fact I received these products for free is not going to affect my opinion of the items, since I already knew I loved Twin Oaks tofu (consider this my required disclosure for accepting a free product), but I was also impressed by a couple of things specific to the Sunergia brand, which I had never tried before – instead of soy flour (which is still in the ingredients listed on the website), the Sunergia flavors now contain quinoa and/or amaranth (most contain both).
One thing that has remained unchanged: the majority of the ingredients are organic. You can also see on the package where it says the product is gluten-free (under the Italian Herb label in this case):
So of course I had to make today’s lunchbox with some tofu, and I started with Italian Herb. Here are the contents of today’s lunchbox:
- Sunergia Soyfoods Italian Herb Tofu, grilled in a dry pan, atop steamed kale with raw fennel and raw red peppers
- Pumpkin chia pudding
I am bringing just lunch and one snack today.
And I just realized, that was a real-time lunchbox, which was made possible by the fact I did not make a smoothie this morning. Have a great Thursday!

Reading your blog makes me want to try new things. This is good. I've never had chia seeds. I've read a lot about them and I found a jar in Hy-Vee last week and almost bought it. I am going to try Gena's recipe for Pumpkin Chia Pudding this weekend. I love pumpkin and I love pudding and chia seeds are good for you. Sounds like a winner. Thanks.
I still haven't tried the Sunergia products, but should probably review them one of these days for Go Dairy Free. Glad to know you enjoyed them!
