As you saw from my post yesterday, I attended the Gluten-Free Labeling Summit 2011 (aka 1in133) organized by Jules Shepard and John Forberger I stopped by for a little while at lunchtime, and then again in the later part of the evening reception. I knew that my lunchbox yesterday had to be easy and very portable. Here are the contents:
- Pumpkin Chia Pudding
- Super quick green smoothie
- Red pepper, cut in half and seeded, stuffed with the Curried Green Hummus from Appetite for Reduction.
- Vegan Herb Crackers
The peppers was pretty portable but I ended up just taking the crackers and the green smoothie with me when I went over to the Summit at lunch and when I told Linda of Gluten-Free Homemaker and Brittany of Real Sustenance that I had a green smoothie in my purse, Linda said we needed to take a picture of that. We totally forgot, but on my way back to the office I took a picture of it before drinking it:
I always put the jar in a recycled produce bag in case of leaks.
And that is today’s (or really yesterday’s) lunchbox. Have a great Thursday!
