Happy Thursday! Today’s lunch and two snacks:
- Quinoa Protein Bowl from Choosing Raw (with white beans (cooked in the rice cooker) as I am out of frozen edamame)
- Squash and Chard Casserole from Tasty Eats At Home – I discovered this recipe when I adopted Alta last month.
- Raw green pepper
- Green juice: cucumber, celery, carrot, ginger, lemon, basil stalks, kale stalks, chard
When I packed the Quinoa Protein Bowl yesterday, somehow all the sweet potato ended up on the bottom, but today they are up top. This is enough quinoa to eat 2/3 for lunch with the Squash and Chard Casserole and the remainder with the green pepper as a snack. I have long ago given up having discrete snacks that are different than my meals.
