Happy Sunday. Today, I had to brave the heat wave and run a few errands, so I packed this super-refreshing lunchbox:
- Spiralized zucchini, with Paprika Dressing, atop baby spinach, and with chili-powder rubbed grilled tempeh
- Berries from the farmers’ market
I have talked before how I love weekend lunchboxes – one of the reasons is that I can pack something that would not ordinarily hold up for a whole workday but holds up well for a couple of hours. The zucchini did not get soggy from the dressing, nor did the spinach underneath, since I only toted them around for about an hour before it was lunchtime.
This weekend went by too fast!
