Gluten-Free Vegan Recipes for Thanksgiving

Happy two days before Thanksgiving!! I am kind of a last minute Thanksgiving person – usually my husband and I plan the menu the weekend before, but sometimes we have been known to go shopping as late as the morning of Thanksgiving. I know, I know … but we can do this because (1) there is no advance planning regarding a turkey involved, seeing as there is no turkey involved and (2) Thanksgiving for us tends to be very small. It is a lot easier to be last minute about a meal when only a handful of people are involved, or just the two of us.  I have been seeing many beautiful round-ups on the web – including my friend Iris who featured my Vegan Pumpkin Parfait on her beautiful Thanksgiving Desserts Post.  My friend Johnna also wrote a fantastic post on what to do when a guest has special dietary considerations, quoting many of my favorite gluten-free bloggers and me as well.

If you are still looking for recipes close to Thanksgiving, here are some of my favorites, in addition to the Grain-Free Cranberry Sage Dressing which you see pictured above,

Collard Greens with Tahini

Peas ‘n Kale Salad with Paprika Dressing

Quinoa Buckwheat Pilaf

Candy Striped Beet Quinoa Salad with Scallion Cashew Cheese

Rustic Cranberry Spice Biscotti

Luscious Pumpkin Ice Cream

And finally, a note of gratitude – I feel so grateful for so many of you who join me on this blog, year after year. My life has also changed quite a bit in the last year, mostly for the better, and for that I am also very grateful. Happy Thanksgiving!
