Today’s Lunchbox
I am continuing my approach of sticking to the same cookbook and/or blog for several days at a time. Today’s lunch and two snacks are:

- Smoothie made of almond milk, brown rice protein powder, roasted pumpkin, pumpkin pie spice and ice
- Funa (aka fake tuna salad) from The Spunky Coconut Cookbook stuffed into collard wraps with carrots and peppers

I haven't had a pumpkin smoothie in so long! AND I've been eyeing up the collards at my local market lately. Definitely going to be biting off you next week! 🙂
Those collard wraps look divine. Definitely need to get the Spunky Coconut book!
