Emergency Migas

I love Smitten Kitchen - the photography is beautiful, the recipes are wonderful, and Deb, the writer, is very funny. But sometimes, Smitten Kitchen tortures me – last Wednesday is a prime example. I was working late and made the mistake of taking a blog break and saw that day’s Smitten Kitchen post – Migas with Tomato-Chipotle Coulis. I have never had migas, but I got that distinct must-try-this-recipe-now feeling – it didn’t help I was already craving scrambled eggs for some unknown reason that evening.
I had all the ingredients for the coulis, but by the time I got home later that evening, I was also starving. Plus the only pork product in the fridge was prosciutto which no matter how much I starred at it, I just couldn’t will into a decent substitute for chorizo. So I decided to table trying to make the Smitten Kitchen recipe and make emergency and completely inauthentic migas instead, since I had multigrain corn chips from Food Should Taste Good and some yummy salsa from Green Mountain Gringo. The Emergency Migas were tasty and hit the spot. And I made the Migas from Smitten Kitchen a few days later and they were beyond delicious too. Emergency Migas
Serves 1
1/2 tablespoon extra-virgin oilive oil
2 eggs
1 handful corn chips
spicy salsa
Heat the olive oil in a skillet. Add the eggs and stir. After a minute, add the chips and, using a wooden spoon, crush the chips as you stir to cook the eggs. Cook for about three minutes, until almost cooked through. Transfer to plate, top with spicy salsa. Picture by City Girl

Migas are such a TX thing – you can find them on any breakfast/brunch menu in Austin!! Aren’t they delish??

Carolyn – migas are really yummy. I am going to start looking for more recipes as I have never seen them in DC or NYC brunch places.

Michelle – they are super easy though probably not very authentic.
