Gluten-Free Vegan Focaccia

So this week, I love Karina’s Kitchen Gluten-Free Vegan Foccacia. Incidentally, Karina’s Kitchen is not a new discovery {and you should visit for healthy cooking inspiration complete with beautiful photography}, but the foccacia was. I do not seem to be able to stop talking about it, and have already made it twice. Above is a picture of the second one I made, topped with oven-roasted cherry tomatoes and lots of microplaned garlic.

I am so surprised how easy it is to find gluten-free recipes. I was in Trader Joe's yesterday and noticed a ton of gluten-free items. While I personally do not have a problem with gluten, I have several friends that do. It is great that we live during a time that is so conscious of other people's food needs.
