Market Week: Roasted Okra

Today I am sharing with you one of my new favorite side dishes – roasted okra.  This year was the first year I bought okra at the market, and I was intrigued by the description of roasted okra while reading through FatFree Vegan‘s archives (and by the way, FatFree Vegan has an amazing treasure trove of recipes).  She was right – they are both crispy and tender. I love roasted okra on its own, with a lentil dish, or for the occasional times I have grilled chicken – the okra and chicken really work well together.

I've just fallen in love with okra this summer – I liked it in the past, but it's really showing me its colors now. Beautiful photo, too!
