This year was the first year I bought okra at the market, and I was intrigued by the description of roasted okra while reading through FatFree Vegan‘s archives (and by the way, FatFree Vegan has an amazing treasure trove of recipes). She was right – they are both crispy and tender. I love roasted okra on its own, with a lentil dish, or for the occasional times I have grilled chicken – the okra and chicken really work well together.
