As much as I wish I could put together intricate meals to share with you this week, it’s definitely one of those weeks – so tonight, dinner was easy and simple – leftover Carrot Ginger Soup with some Kale Salad. Perfect post-yoga food. You might remember that the Carrot Ginger Soup was a stovetop-optional recipe when I made it on Sunday. Well, tonight, I just ate it cold, with extra lime juice, and it was amazing and refreshing. And, seeing as our dishwasher is leaking (huge boo!) and the kitchen sink is also on the fritz, the fewer dishes, the better.
