Market Week: More Basil and Tomato Goodness

 Market Week is sponsored by Kelly of Eat Make Read.  So yesterday I told you about a tomato basil pasta, but today I wanted to tell you about another way I am indulging in all the lovely basil and tomatoes at the market.  This week I dehydrated some small tomatoes and then used them to make Cashew Pizza Cheese, a recipe I discovered on Choosing Raw.  I love this cashew cheese as it is tangy and rich and flavorful with tomatoes and basil:

I sometimes eat Cashew Pizza Cheese straight out of the jar, but it is also a great lunch salad topping, along with roasted eggplants, chickpeas cooked with tomatoes, and some sliced carrots.  Of course, the salad is a mixture of lettuces and arugula from the market:
