Today was an unusual day in that I packed lunch last night (including making green smoothies so I could sleep an extra little while this morning) but then decided this morning to work from home until midday (the unusual part is that I never work from home). I ate my mid morning snack before I thought to take a picture of my at-home lunchbox, so above is only the picture of my actual lunch, and no snacks:
- Quinoa salad leftover from Monday
- 16oz of my super quick green smoothie
- Kale chips (served in a pretty glass bowl since I was home to eat my lunch today)
The kale chips today were actually the leftovers from making Ricki’s Hail to the Kale Salad, which husband and I feasted upon last night. I made extra of the salad just so I could dehydrate some of the kale into chips. Somehow, the lime in the dressing becomes a bit more assertive after the dehydration, so these chips were wonderful. Heavy on the lime, with just a hint of salt. They are wonderful.
