Happy Friday! Friday lunchboxes are always a bit different for me. Usually they are either super basic, or really complicated (because of a Thursday night cooking yen). The above is the super-basic kind:
- Leftover quinoa with pesto and herbs minus the white beans
- A basic kale banana smoothie
- The last of the kale banana smoothie mixed with chia seeds and raw cacao. When I make smoothies, I invariably have an extra couple tablespoons so lately I have been been mixing those with chia seeds, some almond milk, and sometimes raw cacao. It has been a fun way to try out chia pudding flavors.
On other news, today’s lunchbox is the 101st lunchbox. I should have celebrated with the 100th lunchbox that I posted yesterday, but I was convinced today was the 100th. Either way, that means there are over 100 gluten-free lunchbox ideas, the vast majority of which are vegan, on this blog.
