You all know my love for weekend lunchboxes. Perfect for on-the-go. They can include avocado since I usually make the lunchbox a couple of hours before eating it and the avocado does not have a chance to turn brown. This is last Saturday’s lunch:
- Socca pizza crust from Simply Sugar and Gluten-Free by Amy, who has a blog of the same name. I used white bean flour which I wanted to finish instead of chickpea flour and the crust still turned out great. The socca pizza is topped with pesto, broccoli, peppers, mushrooms and spinach.
- Steamed broccoli
- Sliced red pepper and guacamole for dipping
