{Today’s Lunchbox} Vegan Greek Salad and a Lunchbox by Faye of Raw Lawyer

Greek Salad Lunch

Today’s lunchbox includes:

We made two Greek salads for dinner last night; one for me and one for my husband. His had feta cheese (not vegan-friendly) and olives (which I hate).

Greek Salad

Quick Greek Tofu Salad

  • Red Onion, finely sliced
  • Cucumber, chopped into chunks
  • Tomato, cut into wedges
  • Fine herbs tofu, cut into chunks
  • Olive Oil
  • Oregano

And toss.

I included the tofu because I wanted something white and chewy to substitute for the feta. I’ve been experimenting with making my own firm almond cheese lately but I’m not quite there yet. I made a decent batch last week, but I still need a little more practice. I’m almost there. And I didn’t want to sprinkle Daiya onto the salad – that just seems wrong.
