I cannot quite believe it is Tuesday or that the long weekend is gone – though the later makes sense considering I was at work part of Sunday and most of yesterday. Today’s lunchbox involves one of my favorite smoothies: the Pink-Topped Carob Smoothie. I did not set out to make it pink-topped, but I had extra room in the jar and wanted to fill it up (I find smoothie taste fresher if you fill the jar right up to the top). Here is today’s lunch and one snack:
- Black bean salad with pineapple, red pepper, lime juice, cilantro, scallions and green pepper, with an avocado to cut up into it, as well as extra lime.

Thank you for all the great comments on my Lemon Carob Bars. I have had carob on the brain this month, mainly because of the Sweet or Savory Kitchen Challenge which is focusing on carob this month and hosted, as always, by Kimm of Affairs of Living and Ricki of Diet Desserts and Dogs – some really great carob recipes have been submitted and I am finding a renewed interesting in the ingredient for dishes beyond smoothies.
