I was initially going to call this lunchbox post “The Plague, I Has It” but I realize that is a bit over-dramatic. I am definitely not feeling good, and no, I cannot take today off for a variety of reasons (fortunately, I have my own office, so it is not like I am getting everyone else sick). If I feel worse today, I am hoping to take tomorrow off.
In the meantime, I have zero appetite. When I woke up this morning with an aching throat instead of my usual appetite, I knew I had to do something about it. When I am sick, I really like hot vegetable broth with miso, but I knew I was out of broth. I did have juice pulp in the freezer (the base of my vegetable broth) so I threw some of that into the rice cooker with water to get the broth going, and started making juice for today. I almost never juice in the morning, seeing as with a masticating juicer, you can juice a a day ahead, and I was planning to have a delicious, cold, banana spinach smoothie today, but I knew I needed something a bit greener and lower in sugar. So I juiced and added the pulp to the simmering stock. I have already had about 16-18 oz of green juice and packed the rest for the lunchbox below:
- Juice: broccoli, kale, celery, ginger, carrot
- Hot vegetable broth with a waning jar of South River Garlic Red Pepper Miso
- Lucky hemp bread
- Raw spinach burger (see yesterday)
- Grilled tofu
- Mushroom Walnut Pate from Veganomicon
I am still debating packing some kale chips, but I may save them for tonight. I had prepared the food part of this lunchbox on Sunday already, so decided to pack it, but honestly, I just may go buy more juice near my job if I keep not being hungry. Juicing this morning was way way more work than I felt I had the energy for.
