{Today’s Lunchbox} Not According to Plan

Yesterday was pretty exciting – I completed a 21 yoga classes in 21 days challenge – except that I had to complete it in 20 days because today I can’t go to class today.  At any rate, it was exciting, but long story short, nothing else went according to plan, including the lunchbox post of the day.  I ended up going to sleep at 9pm, though not before my husband surprised me with a delicious taco dinner, complete with guacamole (there are advantages to meal planning fatigue).

The good news? You get two posts today.

Here are yesterday’s lunch and two snacks:

The last two recipes are part of my monthly Adopt a Gluten-Free Blogger cooking – this month I adopted Heather and Cheryl, who both have great recipes.  Adoption posts forthcoming!

Congratulations on finishing the yoga challenge! That's awesome. I've always wanted to participate. It would be great if you could share anything you learned or realized from the experience at some point.

I think "Not According to Plan" is the title for most people's life stories. 😉 That taco meal sounds yummy. Yippee on accomplishing the challenge! And WOW on adopting both Heather and Cheryl … you are an overachiever, my friend! Look forward to your posts. :-)
