Brown Bag Challenge

This month I am participating in the Brown-Bag Challenge where the Food Network’s Healthy Eats blog is teaming up with fellow food bloggers to host a month-long initiative to eat consciously and save money by packing a lunch each weekday instead of eating out. Wednesday’s lunch and two snacks:

  • Kale salad, massaged with lemon juice and extra virgin olive oil, topped with nutritional yeast, which is hidden under the black beans, roasted butternut squash (first of the season!) and scallions. 
  • The last bit of Faye’s Chocolate Chia Pudding left from yesterday’s lunch
  • Fresh figs

This lunchbox is beautiful! The colors are so vibrant and the shine on the food is so enticing. I love the idea of a kale, squash, and black bean salad. I may have to try that this week. And I just bought figs today!
