This lunchbox includes a couple of new favorites and some long-standing ones:
- Speedy Butternut Squash and Black Bean Salad
- Masoor Dal
- Living Spoonful crackers, leftover from my September trip
- Raw cacao nibs and raw cashews – last time I brought these in a lunchbox, I had added a few drops (maybe 7?) vanilla stevia to the combination, but that had softened the cashews by lunchtime. This time, I sprinkled the stevia over just the cacao nibs (which, let’s face it, can use some softening) and put the cashews on top. It worked perfectly. No softened cashews. Yay.
