Happy Monday – I did not bring a lunchbox to work today, so I thought I would share instead a Sunday lunchbox from a few weeks’ back, which included kale topped with curried quinoa (I think I finally have my spice ratio settled on this – recipe coming soon!), miso, cashews and chopped peppers, along with a giant crackers from the Cafe Gratitude cookbook. This is the pizza/flatbread recipe, but I tried to substitute some of the oil with more carrot juice – while the crackers are delicious, they are definitely far crispier than the original recipe.
So I don’t know about you, but I am kind of bored with the lunchbox series – I have a couple of ideas on how to shake things up a bit though.
