Mango Habanero Salsa

Welcome to What’s Cooking Wednesday, hosted by Tales from the Fairy Blogmother. Be sure to check out the other recipes submitted for WCW.

Earlier today I mentioned Mango Habanero Salsa as one of the things making me happy on this dreary Wednesday. Therefore, it only seems fair to share with you the un-recipe. You see, husband and I were watching an episode of Throwdown with Bobby Flay {the green chile burger one} last Saturday and he made this mango habanero salsa that looked so good we made it the very next night. We improvised based on the ingredients Bobby Flay listed in the show. Below is what we came up with. Please note that I love spicy food and I have to admit this was very spicy, so do use caution – you may want to start with a quarter or half a habanero if you don’t want too much heat {or conversely, you could double the mango and all the other ingredients but use one habanero}.

Mango Habanero Salsa Un-Recipe
Inspired by Throwdown

Mango Salsa

1 habanero {note, this salsa was very spicy, so you might want to go with half a habanero if you prefer less heat}
1 mango
1 teaspoon canola oil
2 teaspoons agave nectar
2 teaspoons rice vinegar

Roast your one habanero {either in the oven or over a gas flame} until it darkens. Peel and dice habanero and mango. Heat canola oil in medium skillet, add mango and habanero. Cook until mango starts to soften, add the agave and rice vinegar, then cook until it is all gooey {yes that’s a technical term}. Cooking time should be no more than a couple of minutes. Turn off heat. Taste and adjust seasonings, i.e. additional agave if you want more sweet, or rice vinegar if you want more tang.

(I can't spell today) This is definitely a keeper! Wow, habanero and mango, what an interesting combo for salsa.

We don't get those potent chiles here in Italy, but I was able to smuggle some in from our recent trip to California…

Ciao,
Lola xx

What a great combination of ingredients! I definitely would go for the half habanero – we're wimps around this house. I think this would have been great in the fish tacos I made.
