Thursday Lunchbox

So glad you enjoyed my guest post over at The Daily Dietribe this morning.  Below is today’s lunchbox, a classic example of something thrown together in a total hurry this morning:

Lunch and two snacks:

  • Kale chips and kale salad (see note below)
  • Raw red peppers and steamed sweet potatoes on top of the kale salad:

  • Hummus , in the jar I used to store it (a washed out Artisana jar that still has its old label) as I did not have time to portion it out this morning. I ate the hummus spread on red pepper slices.
  • Mary’s Gone Crackers Sticks and Twigs in case I wanted to have some with the hummus (I ended up not eating any)
  • Overnight oats with raw cacao in a waning Organic Sunbutter jar. My husband has been loving the organic Sunbutter on apples lately, which is how we got through a jar in 10 days.  And yes, I do owe you my spin on overnight oats which I promised last week when I used another waning Organic Sunbutter jar.  

Note regarding kale chips and kale salad: I started off making kale chips based on one of Meghan’s kale chips recipes last night – I had put half in the dehydrator and was about to put the other half in, but decided to save it as salad. That was mainly to see how well kale massaged with tahini, tamari, nutritional yeast, cayenne and lemon would survive overnight in the fridge, as opposed to kale salad just massaged with extra-virgin olive oil and salt. And also because I realized I needed a salad or some sort of green for today. The verdict: the massaged kale survived fine, but I think if you are going to have it as salad and want to leave it overnight in the fridge, it is better to just massage it with oil and salt and bring a tahini dressing separately.

Also, since buying a dehydrator in June, I have been getting questions about whether kale chips are better/different if made in a dehydrator than the oven. I need to do a tasting side by side (ie dehydrator versus oven batch) because honestly, I swear they taste the same to me, with the dehydrator versions being maybe slightly crunchier, and that really depends on the batch. My husband, however, swears that oven-made kale chips taste better. All I know is that last night I mixed the kale with the coating, put it in the dehydrator, set the timer, went to bed, got up just as the dehydrator was clicking off and all I had to do was pour the kale chips into a container to take to work. There was not staying up later to wait for the chips to be done in the oven.  So really, I like the dehydrator version because it means kale chips and more sleep.   And really kale chips that practically make themselves and extra sleep is a pretty attractive proposition, though that might just be because I like kale chips far too much.

cant wait to get the cacoa powder overnight oats recipe. I just bought some Navita Naturals raw cacoa powder myself and am trying to use it.

Interested in knowing your thoughts on oven or dehydrated kale chips. We have only done them in dehydrator, just them that way. But maybe one day would try in oven.
