Happy Tuesday! Here are today’s lunch and two snacks:

  • Brown rice tortilla stuffed with 1/3 cup hummus, 1/2 cup mashed roasted sweet potato, sliced zucchini and 1 tablespoon chopped scallions, and seasoned with hot sauce and smoked salt.  If you are curious about how to make the tortilla soft and pliable, see here

  • Quinoa with a red lentil apple dal.  The red lentil apple dal is actually my submission to the SOS Kitchen Challenge, but I still need to take a picture and write up the recipe.  I will update this post once I have the recipe up.

  •  Super quick green smoothie (see recipe below)

Yesterday’s lunchbox, despite being varied and plentiful, left me a bit hungry so I definitely stuffed the tortilla a bit more an added a protein-packed second snack in the form of quinoa and lentils. I initially planned to bring a kale salad today, but I fell asleep early last night and was really rushed this morning, so for greens went with this super basic and fast smoothie.  It uses minimal ingredients and because it is spinach based blends faster than just about any other smoothie I make.

Super Quick Green Smoothie
Makes 2 16oz smoothies

1 1/2 cups almond milk
1 Tbsp chia seeds
1 scoop Sunwarrior Vanilla protein powder
3 cups spinach
1 banana, frozen into chunks
4 ice cubes

Place all ingredients in blender and blend until smooth.
