{Today’s Lunchbox} Fusion

I have always thought there is a fusion, as in an intended combination, and fusion, as in a fancy way of saying the flavors are all over the place.  Today’s lunchbox is a little of the later.  I so appreciate so many of you saying that I am on top of things for having my lunch ready every day.  The thing is – it is definitely not foolproof.  Particularly during a busy work week.

Enter fusion.  Here are lunch and two snacks:
  • Steamed kale with leftover brown rice noodles, which had been tossed with Emily’s four ingredient peanut sauce, and peppers, scallions and carrots.  This peanut sauce is truly lovely.  It uses Trader Joe’s peanut flour (which you can also get at Amazon) which gives the sauce lots of peanut flavor but does not have that heaviness peanut sauces usually have.  I loved the sauce tossed with noodles and vegetables for dinner, and the dish was just as good the next day.
  • Naomi’s Nomato sauce (I am adopting Naomi for Adopt a Gluten-Free Blogger, so cooked up three of her recipes recently), mixed with some cooked white beans and Angela’s easy vegan parmesan.
  • Basic green smoothie made with kale, kale stems (leftover from stemming the kale before steaming it), banana, stevia, almond milk and vanilla protein powder.
So yes, there are some Asian-influence noodles along with distinctly European flavors in the beans and sauce.  I made sure to eat the beans as a snack separately from the noodles (which were my lunch) because the two dishes just did not go together at all.  I tried these beans with Nomato as an experiment, and the vegan parmesan really kicked the combination up nicely.

Note: I just realized the brown rice noodles are not currently available on Amazon.  The best substitute I would recommend is Tinkyada brown rice spaghetti

Oh wow, peanut sauce is really one of my favorite foods! I'm a broccoli addict too, so brown or white rice noodles with peanut sauce and broccoli is probably one of my favorite lunch meals.

I just checked out the Nomato sauce, unreal idea!
