{Today’s Lunchbox} Magical Kale Chips

As I have mentioned before, Gena of Choosing Raw provides fantastic lunchbox inspiration.  She is among the bloggers that inspired me to try collard wraps months ago, so it was exciting to see her post a tutorial on how to make them recently, which now provides a great place to send people who are curious about my kale wraps.  Even more magical though is Gena’s latest kale chips recipe.  These chips are magical in that they are the first dehydrator kale chips my husband actually liked.  Usually he prefers basic kale chips (olive oil and salt and/or some spices) made in the oven, whereas I far prefer kale chips coated in either a tahini or a cashew base, usually mixed with spices and/or nutritional yeast.  This time though, I came home to find him crunching on some as a side to a burrito. I don’t know if it is the addition of hemp seeds or the fact that kale chips in winter have to spend less time dehydrating (I am guessing it has something to do with the lower humidity in winter in this area) and therefore are not quite as fragile, but he likes these.  And I love them.

Monday lunchbox wraps

This lunchbox is similar to my Wraps and Chips lunchbox from last fall. I love the combination of kale chips and collard wraps.  Today’s lunchbox contains lunch and two snacks’ worth of food:

  • The magical kale chips, which are made with nutritional yeast, cashews, hemp seeds, red pepper and some other spices (see here for recipe).
  • Some leftover kale chip coating, which is great used as a dip for collard wraps.
  • Collard wraps stuffed with radicchio, leftover black beans cooked with cumin, roasted sweet potato and scallions.
  • An eighth of a recipe of my Mexican Chocolate Mousse (also, incidentally, inspired by Gena) made with 1/2 an avocado and adjusting the quantities as needed.

Before I wish you a happy Monday, I have a few questions for you: do you pack a lunchbox regularly? What are your favorite lunchbox staples? And, what are your favorite lunchboxes here on this blog?  I would love to hear your thoughts because lately I am always seeking lunchbox inspiration.
