{Today’s Lunchbox} Looks Are Not Everything

It is a good thing that looks are not everything when it comes to meals and lunchboxes because, as delicious as the contents in this lunchbox are, this is definitely not going to win any prizes for looks.  Here are lunch and two snacks:

The focaccia was a twist on Carrie’s  Almond Flour Pizza Crust (you might remember, I adopted Carrie of Ginger Lemon Girl recently) – I love this crust, but wondered whether I could infuse it with basil, so this time I did just that. I added to the crust a couple of tablespoons of basil pureed with extra-virgin olive oil (also from my freezer stash).  Instead of the pizza crust texture from Carrie’s original recipe, this variation ended up tasting just like basil focaccia which was very exciting! The mixture of tomato paste, herbs, garlic scape pesto and mushrooms just added to the focaccia feel of the whole dish.  And the leftovers are the perfect size for a lunchbox. 

The only downside – not the most attractive of leftovers, especially when combined with juice pulp crackers.  Incidentally, you will be seeing a lot more juice pulp recipes in my lunchboxes, as I had totally underestimated the volume of pulp juicing produces and I am determined to not discard any of it – err, within reason, as collard pulp tasted terrible to me, so I actually pitched that.

Looks like the juicer is really working out well for you! Any word on the Vitamix? I thought they were indestructible…
