{Today’s Lunchbox} Faye’s Lunchbox X: An Ode to Simplicity

I am on vacation, but {Today’s Lunchbox} is not.  I will post my travel lunchboxes for this trip Thursday and Friday, but in the meantime, I am very grateful to Faye for contributing a guest post. See Faye’s past lunchboxes here.

Today’s lunch and snacks:

I do love the occasional complicated raw vegan dish, but often the simplest meals are the best meals.

Take for example this simple cabbage salad by Victoria Boutenko. It includes very few ingredients, all of which will be familiar to most people. I even put off trying it because it just seemed way too plain. What a mistake.

One day, I had a head of cabbage that needed to be used so I just gave it a shot. I was rewarded for my efforts – what a phenomenally tasty and simple salad. I had my mom over this week and while she’s not a huge fan of cabbage, she loved it.

The rest of my lunch…a pear and some cooked green beans…a smoothie made of some random fruit and veggies that I needed to use…hummus with some cut up veg…

We had a staff party last week and the interns were asking about my high raw/vegan diet. I started to explain, but at one point I just pointed to the tropical fruit plate one of them had made and indicated that the platter was in fact both raw and vegan.

The terms “high raw”, “vegan”, “plant-based”, “whole foods” can seem complicated and confusing to the uninitiated and unnecessarily so. In many ways, my diet is far simpler than that of many people I know. I don’t count calories. Rarely do I ever need to check the ingredient list. I shop in very few sections of the grocery store, skipping entire aisles.

That isn’t to say that I don’t take my health seriously. I do cover my bases (EFAs, B12, Vit D, etc.). I get blood testing done on a regular basis and keep copies of all my health records. But these are practices that I very strongly feel that everyone should do, whether they are omnivores, plant-based foodies or aficionados of Burger King’s Whopper.

We have one body and we need to take care of it. And while doctors and clinics keep records and will track with us (if we engage in that kind of relationship), people and records fall between the cracks. At the end of the day, our health is our responsibility.

But I digress. To living simply!

awesome – i'm so inspired by raw vegans… there's so many delicious recipes and great nutrition info to learn!
