{Today’s Lunchbox} Hash and Kale

And it’s Monday. My weekend flew by, mainly because I was at work, and I am so not quite ready for another week to start.  Today’s lunch and two snacks are favorites you have seen in past lunchboxes:

  • Gena’s Protein Packed Kale Chips from Choosing Raw
  • A Pumpkin Cranberry Muffin from Carol Kicinski’s upcoming book Simply… Gluten-Free Desserts (reviewed here)
  • Steamed kale and steamed broccoli with Miso Tahini dressing from Delectably Free (see my Adoption post of Beth’s blog)
  • Veggie-full Breakfast Hash from Ricki Heller’s latest book Good Morning! Breakfasts without Sugar, Gluten, Eggs or Dairy. I was a recipe tester, so have been making several recipes from this wonderful book for a couple of months.
