Adopt a Gluten-Free Blogger: Alisa of Alisa Cooks

I actually cut dairy out of my diet before gluten, and one of the first resources I sought out was Alisa Fleming’s website Go Dairy Free.  Eventually, I also purchased Alisa’s book Go Dairy Free: The Guide and Cookbook for Milk Allergies, Lactose Intolerance, and Casein-Free Living.  Both the book and the website have been really invaluable to me the last couple of years.  Somewhere along the way, I also discovered that Alisa had her own food blog called Alisa Cooks.  And many of the recipes are gluten-free, not to mention scrumptious.  Alisa Cooks now has a gluten-free recipe index as well, which is perfect for those of us who avoid both gluten and dairy.

Eventually, Alisa and I started chatting on email and through our blogs.  And she is lovely.  It has been a pleasure to get to know her.  Alisa adopted me a couple of months ago for Adopt a Gluten-Free Blogger, the event created and hosted by Sea of Book of Yum, but it was only this month that someone else did not beat me to adopting her.  I knew I was definitely going to make Alisa’s Slightly Spicy Tofu and Avocado Hand Rolls, as I had been eyeing them for months.  I used her recipe for Brown Sushi Rice, and made very slight variations on some of the ingredients. I find Coconut Aminos are sweeter than tamari, so I substituted two tablespoons of Coconut Aminos for the tablespoon tamari and mirin the recipe calls for, and I skipped Sriracha in favor of more sesame chili oil.

The hand rolls were everything I expected – creamy, spicy, salty and satisfying. I loved every bite, and loved the side I made to go with them.  You see, Alisa and I have a broccoli obsession in common.  We can both happily munch our way through a big bowl of broccoli.  So it only made sense to make Alisa’s Sauteed Lemon Garlic Broccoli.

Both recipes were amazing and made for a great Saturday night dinner. A few days later, I combined two more of Alisa’s recipes into one amazing bowl of deliciousness. Below is Alisa’s Spiced Apricot Cashew Smoothie topped with Magical Peanut Butter Shell.  This made for a scrumptious combination though the peanut butter on apricot does not show up so well on the picture.

The smoothie with the shell really was like eating a bowl of soft serve ice cream, though I had also been planning to make the Dairy-Free Peanut Butter Ice Cream with Sweet Peanut Butter Pieces.   I did not get around to that but will definitely making it next summer, along with more of Alisa’s recipes.  I encourage you to check out Alisa’s blog as she has a tremendous variety of recipes for all occasions.

This is such an awesome post! Thanks for adopting me Valerie. It is always fun to see your recipes made in another kitchen.

Hmm, maybe we should co-invest in a broccoli farm.

Good to know that the coconut aminos are sweeter. I haven't tried them yet and realize now that I should get a bottle to try so that I can recommend how to use it.
