Brown Bag Challenge

Happy (late) Friday (night)! Today’s lunchbox was a study in making leftovers taste different. I had some black-eyed peas (which I had cooked with some salsa and sliced fresh jalapeño) and also some Mango Habanero Salsa.  I layered the two into red pepper boats (made from 1 medium sized pepper), which made the leftovers taste very different.  On the side, some steamed broccoli and romaine salad with red pepper, and, of course, a continuation of my cashew and cacao nibs obsession, which I told you about yesterday.
