Brown Bag Challenge

This month I am participating in the Brown-Bag Challenge where the Food Network’s Healthy Eats blog is teaming up with fellow food bloggers to host a month-long initiative to eat consciously and save money by packing a lunch each weekday instead of eating out. Happy Tuesday! Last night I had a very late night at the office and ended up coming home, having a smoothie and basically going straight to bed within a half hour.  This is my lunch and snacks from yesterday:

Lettuce topped with quinoa, sliced peppers and edamame. I skipped dressing and just added a tablespoon of coconut aminos, which is nice in that it did not wilt the lettuce, and added a sweet savory flavor.

Crackers from the Cafe Gratitude cookbook (note, this is the pizza/flatbread recipe, but I tried to substitute some of the oil with more carrot juice – while they are delicious, they are definitely far crispier than the original recipe).

Raspberry Chocolate Chia Pudding, topped with more raspberries.  I made the full recipe and ate a third as my morning snack and the rest as a 5pm snack.

That raspberry chia pudding looks simply delicious! I can't seem to get enough of that dark chocolate and tart/sweet raspberry combination. :)
